Roasted beans remain part of the same NATCHA Lots collection as the green coffee. They are a finished NATCHA interpretation, not a separate generic roasted-coffee line.

The roast discussion begins with the selected lot, intended service or sales channel, destination market, expected volume and timing. Roast style and commercial configuration are confirmed for the active offer.

Actual bean colour varies by lot and roast objective. The reference photograph shows real medium-roasted coffee and is not presented as a photograph of every NATCHA release.

Because Carbonic Maceration makes the bean structure delicate, our reference approach begins with a low drop-in temperature of 90 °C. The roast then rises slowly at around 10 °C per minute, with a prolonged Maillard stage created by reducing heat to build sweetness and allow the full cup profile to form.

When cinnamon colour appears, the roast returns toward a 10 °C per minute rise. After first crack, we wait until the fifth pop, then add 25-35 seconds of development before ending the roast.
