Our Story
The journey of Natcha Coffee began unexpectedly in 2015, during my preparation for the Coffee Masters Competition in London. I’m Natanael Charis, and what started as a moment of panic turned into a discovery that would change everything.
It all began when a group of farmers delivered their beautiful red cherries much earlier than we had agreed. My processing facility wasn’t ready, and I knew the cherries, with their high sugar content, would go bad quickly if I didn’t act fast.
That day, the scorching sun was relentless, and in an effort to save the cherries, I laid out a tarp on the blazing hot patio in front of my house and spread the cherries across it. The heat turned out to be a blessing. As the cherries began to shrink like raisins, something extraordinary happened—aromas of raspberry, blackcurrant, ripe red fruits, and delicate floral notes filled the air.
This accidental discovery amazed me, but I knew the real challenge lay ahead: finding a way to embed these beautiful flavors deep within the beans and preserve them through the entire coffee-processing steps.
Since that day, I’ve been committed to research and development, experimenting relentlessly to perfect the process. This dedication led to the creation of our signature carbonic maceration method with wine yeast, which locks in the unique, complex flavors that define Natcha Coffee.
